  1. In a large bowl, soak 3 cups of rice and methi seeds and on other bowl soak Urad dal over night or for atleast 5 hours.
  2. Blend the soaked rice along with poha adding water if required. collect it into a large bowl and keep aside.
  3. Than soaked urad dal into blender and blend to smooth and fluffy batter. transfer to the bowl of rice batter.mix well.cover and ferment in a warm place for 7-10 hours.
  4. Than add salt and Suji to the batter and some water and mix well.rest for 15 minutes add all prepared vegetables in batter mix well
  5. Heat non stick pan add some oil than add rai and curry leaves and pour a ladleful of the batter on it and spread it in a circular thick motion.
  6. Then cover it with a lid and cook on medium flame.let it fry turn it until the base of the uttapam turns golden brown both sides.
  7. Serve veg crispy uttapam immediately with coconut chutney and sambar.
