- In a wok heat 1/2 cup oil then add onions, sauteed for 2 ' then add eggplants pieces and sauteed, add red capsicum and mushrooms, garlic, ginger, sichuan pepper, red chili & mix together, stir-fry for 5' then add 1 tbs Thai Seasoning Soya sauce, 1tbs sugar, salt, crushed black peppers and stir-fry, then lastly add the corn starch to thicken. Stir-fry for 3' extra, taste the season. Remove and scoop the eggplant mixture into a serving bowl.
